During the day, nutrients are stored through photosynthesis, and at night, the decrease in temperature reduces consumption, allowing sugars to be concentrated and bringing out the sweetness.

○ The blessings of volcanic ash soil and water

Thanks to the well-drained volcanic ash soil and the abundant water nurtured by the mountains, Shiobara turnips grow freely and without stress, resulting in a variety that is both tender and juicy.

Shiobara turnips are so tender you can eat them whole, and so juicy that water drips when you bite into them. First, be sure to peel them. Raw Try it! The sweetness and juiciness will fill your mouth. A local favorite?! Just mix it with miso! Miso mayonnaise is also recommended. Grill in an oiled frying pan until browned. It goes well with Western dishes such as pizza, pasta, and ajillo! It’s delicious boiled too! It cooks quickly and becomes tender in a short amount of time. The leaves and peels are also delicious! Try them in dishes like kinpira (a Japanese stir-fry dish). Deep-fry them and serve them as a side dish. After quickly blanching the leaves, you can use them in a salad or other side dish. Shiobara turnips are sometimes compared to fruit. They can also be marinated raw with olive oil, salt, and pepper. We also recommend taking a big bite with the skin on!
