The secret to its deliciousness
It thrives in well-drained soil containing volcanic ash.
Shiobara Onsenkyo, which was the bottom of a lake until about 300,000 years ago, also benefits from the blessings of past volcanic activity. The fluffy volcanic ash soil, which has both good drainage and water retention , is an excellent environment for radishes, as they can grow straight and tall. When you cut into them, they are so juicy that they stick to the knife , they have a crisp texture when you bite into them raw, and the flavor permeates your mouth. Juicy The rich flavor and gentle sweetness are a gift bestowed upon it by being grown in such fertile soil.

The temperature is unique to the highlands. The large temperature difference between day and night allows the fruit to accumulate a lot of sweetness!
Around the time the Obon festival is over, Shiobara Onsen begins to feel the faint signs of autumn. In the highlands where radishes grow, the temperature starts to drop from evening to night. To withstand the cold, the radishes store sugar in their bodies , which is why highland radishes in autumn become sweeter.
*The shipment of highland radishes will begin around July. Summer radishes have a spicy flavor. Therefore, it’s perfect for escaping the heat!

The abundant mountain water makes everything sparkling and shiny. It's invigorating!
The harvested radishes are carefully washed in plenty of chilled, free-flowing mountain water ! The washed radishes are sparkling and glossy. Even after being taken out of the water, the radishes are given a final rinse with mountain water, becoming beautifully white, as if they had just come out of a bath. This is something unique to the Shiobara Plateau, which is blessed with abundant water .
